yummy healthy "fried" pickles

So after having many cravings for Hooters Fried Pickles but no Hooters restaurant close by... and to be honest I didn't want to pay for something that I could probably make at home ...

I decided I also wanted to go for a "healthier" version.
I Googled and Pinterested looking for a healthy fried pickle recipe. One without flour and one where I could bake the pickles rather than pay fry them.

I couldn't find one that I absolutely wanted to try so I combined ideas from several.

This was my first try and would probably change a few things now that I've tried it.


Ingredients:

1 16oz container hamburger pickle chips
hot sauce
1/3 cup egg whites
6 handfuls Multi-grain Cheerios ( I measured by handfuls sorry )
1 tsp garlic powder
1 tsp Mrs. Dash hot & spicy seasoning (red pepper)
1 tsp pepper


Directions:

Preheat oven to 400 degrees. Use a baking sheet. Lined or not lined. I put pickles on both to see how they would turn out and they turned out crisper on an unlined sheet. So, foil is unnecessary.

Drain pickles. I emptied mine to drain and rinsed them with cold water.

Combine egg and desired amount of hot sauce in a shallow bowl.

Combine dry ingredients in a food processer until powder like consistency. I used a Magic Bullet because it's easier to clean, quick, and well, I don't have a food processer.

Put this dry mixture into a shallow bowl too.

Now, here is the FUN part!
Place pickles in wet mixture than in dry mixture, making sure to cover both sides. Place pickles on baking sheet.

I baked mine 400 degrees for 20 minutes and did NOT turn them.

They turned out looking like the picture above.

But seriously, the most healthy "fried" pickles !!!!


things I would do next time
1. not line my baking sheet with foil
2. omit one of the seasonings as it was too salty for my taste.
3. make my own dipping sauce . Here I used Spicy Ranch with Sriracha on top. I LOOOVE Sppicyyy!!!
